Vinification of the Valdelagunde Verdejo Rueda by Pedro Escudero

The basis for the elegant Valdelagunde Verdejo Rueda from Castilla y León is grapes of the Verdejo variety. After the harvest, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by several months of aging on the fine lees before the wine is finally drawn off.
