Stellenrust's Barrel Fermented Chenin Blanc is a distinctive, complex and structurally sophisticated white wine. The bouquet is reminiscent of a blend of pear, brioche and quince.
Creamy density and richness and a silky texture characterize the sophisticated palate. The caramel, honey and panna cotta notes are complemented by a nice acid framework that provides harmony.
This chenin blanc from South Africa is vinified from grapes grown on old bush vines from single parcels in the Bottelary Hills. Perfectly balanced wood rounds out this amazing, powerful and somewhat unique white wine. Overall, a wonderfully concentrated drop with spicy freshness, wonderfully ripened flavors and an exciting finish.
Vinification for the Chenin Blanc
Harvested in two 'tries'. Sorting out the botrytis-affected grapes. Self-clarification without enzymes. Afterwards, removal to carefully selected barriques of French and Hungarian wood. Spontaneous fermentation. Aging "sur lie" for 9 months. The number 54 above the front label indicates that the wine was obtained from the grape material of 54 years old bush vines.
