After the grape harvest, the grapes reach the press house by the fastest route. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of the fermentation, the Alevilla Verdejo is left to harmonize on the fine lees for a few months.
