Vinification of the Craft Series The Exemplar Viognier by Marisco

The powerful Craft Series The Exemplar Viognier from New Zealand is a single varietal wine made from the Viognier grape variety. The grapes grow near rivers on New Zealand's South Island. The vines here dig their roots deep into soils of gravel. Due to the moderating influence of the nearby river, the grapes ripen more slowly and develop more aromatic partiality. The fact that Viognier grapes thrive under the influence of a rather cool climate also has a considerable influence on the ripening of the grapes. This manifests itself, among other things, in particularly long and uniform grapes and rather moderate alcohol content in the wine. When perfectly ripe, the grapes for the Craft Series The Exemplar Viognier are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully broken up. Fermentation then takes place in large wood at controlled temperatures. The vinification is followed by a maturation of 9 months in French barrels.
