Once perfect physiological ripeness is assured, the grapes for Das kleine Kreuz 1,5 l Magnum are harvested exclusively by hand without the aid of crude and less selective machinery. After the hand harvest, the grapes immediately reach the winery. Here they are sorted and carefully ground. Then fermentation takes place in wood at controlled temperatures. The vinification is followed by a maturation of 12 months in oak barrels.
