The elegant Diamond Heart Blanc de Blanc Sparkling from New Zealand is a single-varietal wine made from the Chardonnay grape variety. On New Zealand's South Island, the vines that produce the grapes for this wine grow on soils of weathered rock. Due to the moderating influence of the nearby river, the grapes ripen more slowly and develop more aromatic complexity. The fact that Chardonnay grapes thrive under the influence of a rather cool climate also has a very high influence on the ripening of the grapes. This manifests itself, among other things, in particularly long and uniform grapes and rather moderate alcohol content in the wine. When the perfect physiological ripeness is ensured, the grapes for Diamond Heart Blanc de Blanc Sparkling are harvested exclusively by hand without the help of coarse and less selective full harvesters. After harvesting, the grapes are taken to the press house by the fastest route. Here they are sorted and gently pressed. Then the fermentation of the base wines takes place. After the cuvée has been put together, further aging follows on the basis of the Méthode Traditionelle. Subsequently, the Marisco Diamond Heart Blanc de Blanc Sparkling matures for several months in the bottle and is finally disgorged.
