The basis for the balanced El Guardián Tempranillo from Spain are grapes from the Tempranillo grape variety. In La Rioja, the vines that produce the grapes for this wine grow on limestone soils. What is unusual about the creation of this top wine from Criadores de Rioja is the fact that the grapes grow on stone terraces in Rioja DOCa (ES). However, this traditional form of vineyard design is very complex and is therefore rarely found. The grapes for El Guardián Tempranillo are harvested exclusively by hand at optimum ripeness, without the help of coarse and barely selective machines. After the harvest, the grapes are quickly taken to the winery. Here they are selected and carefully broken up. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of fermentation, El Guardián Tempranillo is allowed to harmonize further on the fine lees for a few months.
