Vinification of Les Manyes Priorat by Terroir Al Limit
The powerful Les Manyes Priorat from Spain is a varietal wine made from the Garnacha grape variety. The grapes grow under optimal conditions in Catalonia. Here, the vines drive their roots deep into clay soils. The fact that the Garnacha grapes thrive under the influence of a warm climate also has a very strong impact on the development of the harvest. This is expressed, among other things, in particularly well-ripened grapes and a rather high alcohol content in the wine. At the point of optimal ripeness, the grapes for Les Manyes Priorat are harvested exclusively by hand, without the aid of coarse and less selective mechanical harvesters. After the harvest, the grapes are quickly brought to the winery, where they are selected and gently crushed. This is followed by fermentation in large wooden vats at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally racked.
