Vinification of the Molto Negre Cava from Casa Rojo

This elegant cava from Spain is made from the Trepat grape variety. Without question, the Molto Negre Cava is also determined by climate and viticultural style Penedès DO. This Spaniard can be called an Old World wine in the best sense of the word, and it is extraordinarily impressive. After the grape harvest, the grapes are quickly brought to the winery. Here they are selected and gently pressed. Then the fermentation of the base wines takes place.

This Spanish sparkling wine is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to vegetable salad with beetroot, asparagus salad with quinoa or omelet with salmon and fennel.
