Vinification of Stellar Organics Moonlight Shiraz-Merlot W.O. Western Cape

The basis for the balanced Moonlight Shiraz-Merlot W.O. Western Cape from the Western Cape are grapes from the Merlot and Shiraz varieties. After the grape harvest, the grapes are quickly brought to the pressing house. There they are selected and gently crushed. Fermentation in stainless steel tanks at controlled temperatures follows. After fermentation, the wine is aged for several months on the fine lees before it is finally drawn off. After completion, the Moonlight Shiraz-Merlot W.O. Western Cape is gently harmonized.
