Vinification of the Noovi Noovi Rosé Alcohol-Free

This wine clearly focuses on a single grape variety, namely Merlot. For this exceptionally elegant single-varietal wine from Noovi, only flawless grapes were used. After being hand-picked, the grapes are taken immediately to the press house. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After vinification, the wine is aged for several months on the fine lees before it is finally drawn off.
