Oliver Zeter's Palatinate Sauvignon Blanc glows with a light golden color and pale green highlights in the glass. The bouquet of this wine, which is clearly modeled on the overseas style, delights with nuances of green fruits such as kiwi, lime, fresh gooseberry and even some kaffir lime leaf. Herbal notes of grass and lemon balm complement the bouquet of the Zeter Sauvignon Blanc.
On the palate, Oliver Zeter's Sauvignon Blanc starts out wonderfully concentrated, juicy and with immense drinking flow. Wonderfully dense, but not over-extracted, this white wine from Zeter glides over the tongue. In the final again a lot of green fruitiness and mineral nuances.
The drinkable bear with human features on the wine labels was penned by a Palatinate artist who dedicated it to his friend Walter Baer, Oliver Zeter's great-grandfather, in the 1930s.
Vinification of the Zeter Sauvignon Blanc
This single varietal Palatinate Sauvignon Blanc is made from grapes grown in seven different vineyards that vary in location, soil characteristics and microclimate. The vineyards are permanently greened, natural herbs and grass grow here. All this has a positive effect on the aroma of this multi-faceted white wine. Part of the grapes are harvested relatively green, the main part in a fully ripe state, a small part may even be overripe.
The maceration, which lasts several hours, takes place at a controlled temperature and with controlled oxidation, which enhances the bouquet. The must is then gently pneumatically pressed and the must of the Oliver Zeter Sauvignon Blanc is fermented in stainless steel tanks. Part of the wine is fermented spontaneously, and a small portion is even aged in barriques. Before bottling, the young wine is filtered only once with a diatomaceous earth filter. Only then are the various individual wines blended into the final Oliver Zeter Sauvignon Blanc.
