The grapes for this wine come from selected parcels in Castile-La Mancha. The high plateau brings large temperature differences between day and night. Grapes that are overripe or damaged remain in the vineyard. After the harvest, gentle processing in the cellar follows. The grapes reach the press quickly and via short paths. There they are processed destemmed, in order to avoid green notes. A short cold maceration releases initial color and aromatic compounds from the berry skins.
