On New Zealand's South Island, the vines that produce the grapes for this wine grow on soils of sandstone and gravel. Due to the balancing influence of the nearby river, the grapes ripen more slowly and develop more aromatic complexity. After harvesting, the grapes are immediately taken to the press house. Here they are sorted and carefully milled. Fermentation follows in stainless steel tanks at controlled temperatures.
