Tasting notes for the Borsao Tinto Selección

The Selección Tinto Campo de Borja DO from Bodegas Borsao shines in a clear cherry red with purple hues in the glass. The aroma exudes clear notes of ripe cherry fruit combined with a floral touch. The nuances on the palate are very intense. Here, primarily aromas of sour cherries appear, underlined by oriental spices. The nice body is accompanied by balanced tannins. A fine finish forms the finale.

Vinification of the Borsao Selección Tinto

For many years, Bodegas Borsao has been a first-class, consistent and also extremely sympathetic address for red wines, as you can only wish for. The wines produced here are always clear and fruity, concentrated, always fresh with animating acidity.

The 620 or so small producers who have joined together to form this cooperative know how to exploit the full potential of the rustic Campo de Borja region. At an altitude of 350 to 750 meters, they cultivate almost 2,400 hectares of vineyards with very old vines that fortunately survived the phase of new plantings of international grape varieties inthe 1980s and 1990s. In the cooperative's wine cellar, chief oenologist José Luis Chueca likes to fall back on tried and tested methods: cement tanks and barriques are used here, and wine is produced according to traditional principles. For Chueca, the quality of the grape is what counts, because there is no substitute for it in the cellar. 
The autochthonous grape variety Garnacha plays a primary role at Bodegas Borsao; it is believed to have originated in Aragon, as it is also called "Tinto Aragonéz" in Spain. Over the centuries, the Garnacha has adapted perfectly to the harsh life of Campo de Borja, acknowledging the gentle stress with a tremendous concentration of juice. Slate soils, which were formed by the weathering of the granite formations of the Moncayo Mountains, form the base of the bush vines and provide the unique minerality in the wines. In addition, the very continental climate with dry hot days and cool nights has a positive influence on the formation of the grapes. Too hot temperatures during harvest time are counteracted by the cool north wind "El Cierzo", which blows consistently from the Atlantic in spring and fall. The nearby 2,300 meter high mountains with the three characteristic peaks, (Tres Picos) form a natural barrier to the west and help reduce precipitation.

Serve this cuvée of Grenache, Syrah and Tempranillo best at a temperature of 16°C with dark and light, strong dishes.
