Vinification of the Valdelagunde Semidulce from Pedro Escudero
The basis for the elegant Valdelagunde Semidulce from Castilla - León are grapes from the grape varieties Verdejo and Viura. The grapes grow under optimal conditions in Castile - León. The vines here dig their roots deep into soils of sedimentary and weathered rock. Clearly, the Valdelagunde Semidulce is also determined by more than just the soil Castilla y León VT. This Spaniard can be described as an Old World wine in the best sense of the word, with an exceptionally fragrant presentation. After the manual harvest, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Valdelagunde Semidulce can continue to harmonize on the fine lees for a few months....
