Production of Vetus Toro DO – Bodegas Vetus

Bodegas Vetus is located in the Toro DO region in the northwest of Spain, a landscape of barren plateaus, intense sunshine and marked temperature differences between day and night. The vines root deep in sandy, gravelly and clay soils that combine high water storage capacity with excellent drainage. This combination results in low yields but grapes with impressive concentration and aromatic density.

The Tempranillo grape variety, traditionally known in Toro as Tinta de Toro, displays a particularly powerful expression here. Old vines with naturally limited yields produce small, thick-skinned berries with intense colour and a pronounced tannin structure. Harvesting is done by hand, plot by plot, with strict selection already in the vineyard. Only perfectly ripe grapes reach the winery, where additional sorting on the selection table ensures the highest quality.

Fermentation on the skins takes place under temperature control so that the fruit aromas of black cherry and plum are fully preserved. Gentle extraction techniques carefully draw colour, tannins and aromas from the grape skins. This is followed by ageing in small wooden barrels, predominantly of French oak.
