Vinification of the Vinya Palau Merlot Reserva by Jean Leon

The powerful Vinya Palau Merlot Reserva from Spain is a single-varietal wine, organically vinified from the Merlot grape variety. The grapes grow under optimal conditions in Catalonia. Here, the vines drive their roots deep into soils of clay, sand, limestone and gravel. Naturally, the Vinya Palau Merlot Reserva is also shaped by the climate and viticultural style of Penedès DO. This Spaniard can, in the best sense of the word, be described as an Old World wine that presents itself in an exceptionally distinguished manner. After harvesting, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After fermentation is complete, the Vinya Palau Merlot Reserva is aged for another 12 months in French oak barriques.
