Vinification of Oriol Rossell Cava Brut Cuvée Especial
The elegant Cava Brut Cuvée Especial from Spain is a cuvée made from the grape varieties Parellada, Viura, and Xarel-lo. In Catalonia, the vines that produce the grapes for this wine grow on clay and limestone soils. Naturally, the Cava Brut Cuvée Especial is shaped by more than just the Cava DO terroir. This Spaniard can in the best sense of the word be described as an Old World wine that presents itself as extraordinarily youthful and complex. A significant influence on the ripeness of the harvested grapes is also the fact that the Parellada, Viura, and Xarel-lo grapes thrive under the influence of a warm climate. This is reflected, among other things, in particularly well-ripened grapes and a rather high alcohol content in the wine. After harvesting, the grapes are brought to the press house as quickly as possible. There they are sorted and gently pressed. This is followed by the fermentation of the base wines.
