Vinification of Dinastia Vivanco Colección Vivanco 4 Varietales Dulce de Invierno
The well-balanced Colección Vivanco 4 Varietales Dulce de Invierno from Spain is a cuvée made from the grape varieties Garnacha, Graciano, and Tempranillo. In La Rioja, the vines that produce the grapes for this wine grow on clay and limestone soils. Once perfect physiological ripeness is ensured, the grapes for the Colección Vivanco 4 Varietales Dulce de Invierno are harvested exclusively by hand, without the use of strenuous and barely selective mechanical harvesters. After being hand-picked, the grapes are quickly brought to the press house, where they are selected and gently crushed. Fermentation then takes place in stainless steel tanks and small wooden vessels at controlled temperatures. After fermentation is complete, the Colección Vivanco 4 Varietales Dulce de Invierno can continue to harmonize for several months on the fine lees.
