In Baden, the vines that produce the grapes for this wine grow on soils of granite. Without question, Durbacher Schloss Staufenberg Sauvignon Blanc is also defined by more than just the Durbach soil. This German wine can literally be described as an Old World wine that is exceptionally impressive. The fact that the Chardonnay grapes thrive under the influence of a rather cool climate also has a very high influence on the maturity of the vintage. This manifests itself, among other things, in particularly long and uniform grapes and rather moderate alcohol content in the wine. After the grape harvest, the grapes reach the winery by the fastest route. Here they are sorted and carefully crushed. Fermentation follows in large wood at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally drawn into bottles.
