The Edelacker Grauer Burgunder VDP GG from Weingut Bernard Pawis in Saale-Unstrut offers a bright, copper-golden color in the swirled glass. When you swirl the glass, you can perceive an excellent balance in this white wine, as it does not appear watery, syrupy or liqueur-like on the glass walls. This varietal German wine shows wonderfully expressive notes of acacia, quince, pear and pineapple in the glass. Added to these are hints of vanilla, tobacco and butter.
On the palate, the Edelacker Grauer Burgunder VDP GG from Weingut Bernard Pawis starts off wonderfully dry, firm and aromatic. Some wines are dry on the label, others truly are. This white wine belongs to the latter group, as it was vinified with only 2.2 g of residual sugar. Balanced and multi-layered, this light white wine presents itself on the palate. Thanks to its lively fruit acidity, the Edelacker Grauer Burgunder VDP GG appears impressively fresh and vibrant on the palate. On the finish, this wine from the Saale-Unstrut wine-growing region, which has good ageing potential, delights with remarkable length. Once again, hints of quince and pear appear.
Vinification of Weingut Bernard Pawis Edelacker Grauer Burgunder VDP GG

The Edelacker Grauer Burgunder VDP GG is an Old World wine through and through, as this German wine exudes an exceptional European charm that clearly underscores the success of wines from the Old World. After manual harvesting, the grapes are immediately taken to the press house. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
