Vinification of Pagos del Rey El Aviador Blanco
The basis for the balanced El Aviador Blanco from Spain is grapes of the Viura variety. After being harvested by hand, the grapes are immediately brought to the press house. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation has finished, El Aviador Blanco can continue to harmonize for a few months on the fine lees.
