Vinification of the Pablo Claro Cabernet Sauvignon Graciano Special Selection
The Pablo Claro Especial Selección from the winery Dominio de Punctum is vinified as a blend of 50% Graciano and 50% Cabernet Sauvignon with a portion of barrique aging. Only grapes from the estate's own vineyards are processed for this, at an altitude of almost 700 m in the north of the largest Spanish wine-growing region of Castilla - La Mancha. The grapes are not only grown strictly according to ecological principles, but even produced according to biodynamic guidelines. Therefore, this Special Selection of Pablo Claro can even bear the Demeter logo of the renowned Biodynamic Association.
