Vinification of the Bodegas Abanico Pasos de la Capula Verdejo

This elegant white wine from Spain is vinified from the Verdejo grape variety. In Castilla - La Mancha, the vines that produce the grapes for this wine grow on soils of sand, limestone and clay. After harvesting, the grapes are taken to the press house in the fastest way possible. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. The vinification is followed by a few months of aging on the fine lees before the wine is finally bottled.
