Vinification of Pinot 64 Oltrepo' Pavese by Calatroni
This well-balanced sparkling wine from Italy is made from the Pinot Noir grape variety. The grapes grow under optimal conditions in Lombardy. Here the vines sink their roots deep into limestone soils. Pinot 64 Oltrepo' Pavese is an Old World wine in the best sense of the word, as this Italian breathes an exceptional European charm that clearly underscores the success of wines from the Old World. The development of the grapes for this Pinot Noir wine is significantly influenced by the climate of the growing region. In Lombardy, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and even grape clusters and a rather moderate must weight. After the harvest, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. Fermentation of the base wines then follows. After the cuvée has been assembled, further maturation is carried out on the basis of the Méthode Traditionelle. This is followed by 36 months of bottle aging.
