The Red Vineyard from Karl Pfaffmann shows itself in a deep dark purple. Fruity plum and blackberry aromas dominate the nose, followed by mocha and chocolate notes as well as a fine spicy wood nuance.
On the palate, this red wine delights with its pleasant tannin structure, volume and juiciness. The finish of this cuvée is reminiscent of cherries and chocolate with a hint of spice.
Vinification of the Karl Pfaffman Red Vineyard
In order to meet the different demands of the individual grape varieties, they were grown in different vineyards and vinified separately. While Merlot prefers deep soils with an adequate water supply, Pinot Noir requires sandy loess loam with lime influences. Finally, Dunkelfelder requires fertile soil.
After the harvest, the grapes are destemmed and crushed in a mill, from which the mash is produced. This is now left to itself for a certain time before it ferments in the steel tank. The maceration time and also the movement of the mash vary depending on the variety. Finally, the wine is drawn off the mash and aged partly in stainless steel and partly in small or large wooden barrels. In this way, a harmonious interplay between fruit and wood is achieved
