The Sauvignon Blanc Klassik from the wine-growing region of Styria shows in the glass in brilliant shimmering light yellow. The vines here dig their roots deep into soils of slate. Moreover, the grapes of this white wine from Weingut Wohlmuth do not grow in the flat land, but dig their roots into the soil in steep slopes. The steep slope cultivation ensures that even in less sun-drenched regions with shorter growing seasons, the vines catch a maximum of sun. When perfect physiological ripeness is ensured, the grapes for Sauvignon Blanc Klassik are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the hand harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully milled. Fermentation follows in stainless steel tanks at controlled temperatures. After completion of fermentation, the Sauvignon Blanc Klassik can continue to harmonize on the fine lees for several months....
