Vinification of Ojo de Ibiza Terrazas del Norte

The basis for the powerful Terrazas del Norte from Spain is grapes of the Cabernet Sauvignon, Monastrell and Syrah varieties. Terrazas del Norte is an Old World wine through and through, as this Spaniard exudes an exceptional European charm that clearly underscores the success of wines from the Old World. After hand-picking, the grapes are quickly brought to the press house. There they are selected and gently crushed. This is followed by fermentation in large wooden vats at controlled temperatures. Vinification is followed by maturation for several months on the fine lees, before the wine is finally racked. After the wine has been completed, Terrazas del Norte is gently harmonized.
