Reserve Collection Chardonnay - Tokara

The Chardonnay Reserve Collection from Tokara is a pure white wine with a brilliant golden color in the glass. 

The complex bouquet reveals lush aromas of fresh limes, juicy mirabelle plums and peaches - accompanied by floral nuances of orange blossoms. The palate reveals wonderful tropical fruit notes - ranging from pineapple to peach and guava. The wood aging gives this wine a subtle hint of roasted almonds. The body is perfectly balanced with a wonderfully mineral acid structure. The finish is wonderfully spicy and long lasting. 

Vinification of the Tokara Reserve Collection Chardonnay 

Chardonnay grapes are sourced from vineyards on the foothills of the Simonsberg Mountains. 

After harvesting or ripe grapes, they are selected and destemmed in the winery. The must is fermented at 15 °C in stainless steel tanks. Then this white wine sur lie (aging on the fine lees) is aged for 11 months in French oak barriques - of which 31% are new barrels. 

Food recommendation for the Chardonnay Tokara Reserve Collection

This dry white wine from South Africa is excellent with risotto with saffron threads, pasta with truffles or grilled seafood (especially scampi).
