Unico is one of the largest wines in Spain and is the flagship of Vega Sicilia. It appears in a deep carmine red with an intense cherry-red shimmer. The Vega Sicilia Unico is characterized by a powerful, wide and unusually fruity bouquet of spicy berries and dark plums for this vintage. This fragrance is accompanied by a little lavender, the characteristic freshness of the terroir and the classically ethereal incense notes.
The concentrated, aromatically dense and opulent palate of Vega Sicilia Unico shows what a good decision the reduction of yields was. The result was a complex, powerful and great wine with enormous potential, outstanding length and clearly structured tannin.
Vinification of Unico by Vega Sicilia
The grapes for Unico, 95% Tinto Fino, 5% Cabernet Sauvignon, grow on 19 differently structured soils, most of which are rocky and barren. This high-quality terroir is dominated by limestone with varying amounts of clay and limestone. It is also found on classic floodplain soil, which is dominated by sand, silt, gravel and gravel. In these plots of the from Vega Sicilia, all grapes are harvested very selectively by hand and immediately brought into the winery in small 12-kg boxes. Here fermentation is traditionally carried out on the mash. After alcoholic fermentation and biological acid conversion, the Unico is followed by traditional ageing, perhaps one of the longest for a classic bottle wine.
After 10 months in 500l barrels, Unico comes in new French oak barriques for 19 months and then in used French barriques for 8 months. The barrel extension is completed for 20 months in large wood fodder. After filling, the Unico from Vega Sicilia matures for another 3 years on the bottle until it is finally sold.
