Vinification of the White Vineyard by Karl Pfaffmann
The elegant White Vineyard from Germany is a cuvée made from the grape varieties Chardonnay and Pinot Blanc. When they are perfectly ripe, the grapes for the White Vineyard are harvested exclusively by hand, without the use of coarse and less selective machinery. After hand-picking, the grapes are immediately brought to the press house. There they are sorted and gently crushed. This is followed by fermentation at controlled temperatures. The fermentation is followed by a maturation.
