The grapes for this wine come from selected sites on Monte Vulture in Basilicata. There the vines root deeply in volcanic soils of rock, ash and basalt. This terroir shapes the wine with minerality, tension and clear structure. The vines are mostly older and yield small, ripe berries with high aromatic concentration and firm skins. The yield is deliberately kept low so that the grapes can develop plenty of aroma and concentration. Careful canopy management and strict selection ensure that only the best grapes remain on the vine.
The harvest is usually done by hand, in small crates, to bring the grapes intact to the cellar. In many parcels, picking is staggered so that each plot is harvested at optimal ripeness. Before fermentation, another selection takes place on the sorting table. Only ripe, flawless grapes go into the fermentation tank. This keeps the Aglianico’s profile clear and precise. Maceration and fermentation take place under temperature control so that this powerful variety can unfold its full depth and color without showing harshness or bitterness.
