The origin in Alto Adige lends this Pinot Noir its distinctive cut. During the day, many hours of sunshine ensure ripeness, while at night the altitude cools the grapes down again. This preserves freshness, clarity and structure. The soils of limestone, porphyry and gravel foster the wine’s elegant style and give it a fine mineral note.

The Riserva quality is evident in its length on the palate, in the polished tannins and in the complex aromatics. Production of the Blauburgunder Riserva DOC from Prackfol
The grapes for this Blauburgunder come from selected sites in Alto Adige, around Fiè allo Sciliar in Trentino-South Tyrol. The vines grow on slopes with optimal sun exposure and good air circulation. The alpine climate with warm days and cool nights ensures slow, even ripening. On calcareous and gravelly soils, the vines develop small, aromatic grapes with high inner tension.
The grape variety here is Pinot Noir. This demanding Burgundy variety naturally brings a delicate color, fine tannins and a subtle fruit character. In Alto Adige, the climate gives the variety a cool elegance and a clearly defined aromatic profile. The Riserva selection focuses on particularly well-ripened grapes from the best parcels.
The harvest is carried out selectively and with great attention to grape quality. Ripe berries are placed in small containers so that they reach the cellar intact. An initial sorting in the vineyard and a second at the sorting table exclude inferior fruit. Only the best material thus reaches the fermentation vessel.
In the cellar, a gentle destemming takes place first, before the grapes ferment on the skins. A cool pre-maceration releases initial color compounds and aromas. Temperature-controlled fermentation takes place in stainless steel tanks or open fermenters. Regular punching down or pumping over of the cap promotes the gentle extraction of color and tannin.
After fermentation, the young wine rests for an extended period in wooden barrels. This is where the typical Riserva structure emerges. Maturation takes place in a combination of barriques and larger wooden casks, partly with used wood so that fruit and origin remain in the foreground. During this maturation period, the wine clarifies naturally, the tannins integrate and the aromas gain depth.
Extended aging on the fine lees gives the Blauburgunder additional creaminess and complexity. Occasional stirring of the lees, the bâtonnage, brings delicate notes of brioche and rounds out the texture. At the end of the maturation period, a gentle filtration takes place before the wine rests in bottles and completes its Riserva quality.
The producer pursues a clear style with this wine: terroir, elegance and longevity. Every step, from harvest to bottling, is geared towards finesse and precision. This is how a Pinot Noir is created that expresses its alpine origin in the glass and at the same time meets international standards.
Serving recommendations for the Blauburgunder Riserva DOC from Prackfol
This Blauburgunder is ideally suited as an elegant food companion. Its slender style, fine tannins and lively acidity allow for versatile pairings. The wine harmonizes particularly well with dishes that pick up its fruit and spice without overpowering it.
With starters, it shines alongside beef carpaccio, beef tartare with capers or a fine game terrine. Pan-fried porcini mushrooms, truffle tagliatelle or a risotto with wild mushrooms also make fantastic pairings. The earthy aromas of the mushrooms meet the spicy red fruit of the wine.
With main courses, the Blauburgunder shows its full strength. It pairs particularly well with:
- Rosemary lamb chops or braised leg of lamb
- Roast duck with a fruity sauce, such as cherry or orange
- Veal loin with herb crust and root vegetables
- Medium-rare beef fillet or roast beef from the grill
- Braised game dishes such as venison or deer with lingonberries
For vegetarian cuisine, this Pinot Noir is recommended with grilled vegetables, oven-baked eggplant, ratatouille or lasagna with Mediterranean vegetables. Medium-intense hard and semi-hard cheeses, such as mountain cheese, Comté or an aged alpine cheese, also accompany the wine extremely harmoniously.
As a wine for special moments, the Blauburgunder Riserva is an excellent choice. It accompanies festive occasions, family celebrations and elaborate multi-course menus. It also strikes exactly the right note as a gift for wine lovers from the Alpine region or fans of Pinot Noir.
The ideal serving temperature lies between 15 and 18 degrees Celsius. Half an hour in a carafe opens up the aromas and provides more depth. In a large Burgundy glass, the bouquet unfolds particularly impressively and the fine nuances come to the fore.
The wine accompanies its admirers for many years. A maturation potential of up to ten years from the vintage offers room to find the perfect moment for enjoyment. Over time, tertiary aromas such as leather, undergrowth, truffle and fine tobacco notes emerge. In this way, this Blauburgunder develops from a fruit-driven, elegant red wine into a complex, profound wine of character.
