The Bocca di Lupo Castel del MONTE DOC of Tormaresca delights lovers of Apulian wines as a terroir wine with impressive personality. In the glass, the Bocca di Lupo shines in dense, dark ruby red. On the nose opens a complex bouquet with intense, complementary aromas of red fruits and dried fruit, cherries, mulberries, plums, followed by spices reminiscent of liquorice, pepper, tobacco, herbs and balsamic notes. This Aglianico is elegant on the palate, with firm tannins, of exceptional structure and full body, the texture balanced, tastefully round and harmonious. Long-lasting and of beautiful sustainability in the finish.

Vinification of Tormaresca Bocca di Lupo Castel del MONTE DOC

The grapes of this pure Aglianico are harvested manually at the time of optimum ripeness. After pressing, the must is macerated in stainless steel tanks at about 25 ° Celsius with the shells and fermented alcoholically. The shells are repeatedly gently pumped under with a special technique that allows very gentle and even extraction of colour, aromas and tannins. After removal from the skins, the wine is immediately transferred to French oak barriques, where malolactic fermentation and subsequent ageing take place for 15 months. After bottling, the wine matures for another 24 months in the bottle before being sold


Bocca di Lupo arose from the desire to rediscover this noble and tart indigenous grape variety and reinterpret it as Apulian terroir wine. From fully ripe grapes, dense and positionable wines with great development potential are produced over the years. Bocca di Lupo is the culmination of years of hard work and research in vinifying a wine according to Tormaresca's ideas, which began in 1998.
