The basis for the powerful Centopietre Salice Salentino from Apulia is grapes from the Malvasia Nera di Brindisi and Negroamaro varieties. After being harvested by hand, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. Vinification is followed by aging for 6 months in oak barriques.
