This is a true quality wine that clearly stands out from simpler qualities and thus, despite all its dryness, this Italian delights with the finest balance. Excellent flavor does not necessarily require a lot of residual sugar. On the palate, the texture of this well-balanced red wine is wonderfully light, crisp and silky. On the finish, this red wine from the Latium wine-growing region finally captivates with beautiful length. Hints of sour cherry appear once again. In the aftertaste, mineral notes from the clay-dominated soils also join in.

Vinification of Cesanese Di Olevano Romano Il Fresco from Antonelli Marco

This wine clearly focuses on a single grape variety, namely Bombino Nero. Only first-class grape material was used for this wonderfully balanced varietal wine from Antonelli Marco. In Latium, the vines that produce the grapes for this wine grow on clay soils. After the harvest, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by several months of maturation on the fine lees before the wine is finally bottled.
