Il Verro Coda Di Pecora Sheep presents itself to the wine lover pleasantly dry. This white wine never appears coarse or austere, but rather round and smooth. On the palate, the texture of this well-balanced white wine is wonderfully crisp and fleshy. The finish of this white wine from the Campania wine region is ultimately distinguished by a lovely aftertaste. The aftertaste is also accompanied by mineral facets from the clay- and volcanic-rock-dominated soils.
Vinification of Coda Di Pecora Sheep by Il Verro
This white wine clearly focuses on a single grape variety, namely Coda di Pecora. Only the best grapes were used for this wonderfully balanced varietal wine from Il Verro. The grapes grow under optimal conditions in Campania. Here, the vines drive their roots deep into soils of clay and volcanic rock. After the harvest, the grapes quickly make their way to the press house. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation is complete, Coda Di Pecora Sheep can continue to harmonize on the fine lees for several months.
