Vinification of Hans Baer Dornfelder Feinherb
The basis for the powerful Dornfelder Feinherb from Germany is grapes of the Dornfelder variety. At the point of optimal ripeness, the grapes for the Dornfelder Feinherb are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After hand-picking, the grapes are swiftly brought to the winery. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine is matured for several months on the fine lees before it is finally bottled.
