Vinification of the Boschendal Elgin Pinot Noir
The basis for the balanced Elgin Pinot Noir from the Western Cape is grapes of the Pinot Noir variety. The ripening of the harvest for this Pinot Noir wine is strongly influenced by the climate of the growing region. In the Western Cape, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well-ripened grapes and a relatively high must weight. After being hand-picked, the grapes are quickly brought to the press house. There they are selected and gently crushed. Fermentation then takes place in large wooden vats at controlled temperatures. After fermentation, the wine is aged for 12 months in French oak barrels.
