More information about Flora & Fauna Weiß - Weingut Eymann
Radiant, bright straw yellow flows into the glass and immediately makes you crave the first sip. Flora & Fauna Weiß - Weingut Eymann shows a fine, clear brilliance reminiscent of sunlight on light limestone. Even when swirled, delicate streaks dance on the glass and reveal a juicy, aromatic style with a vibrant core.
On the nose, this Palatinate white wine starts off very inviting and expressive. Yellow Muscat and Gewürztraminer bring a seductive bouquet of exotic fruit and fine spice. Ripe pineapple, juicy mango and lime meet fresh lemon and grapefruit. In addition, there are notes of nutmeg, a hint of rose blossom and a fine scent of orange blossom. The Riesling contributes crisp citrus freshness and a cool, chalky vein that almost recalls wet stone.
With a bit of air, the mineral side comes to the fore. A hint of chalk, delicate herbs such as lemon balm and a fine touch of white pepper round off the aromatic picture. The interplay of aromas appears clear, precise and very animating. This wine invites you to keep nosing the glass and surprises with new nuances every time.
On the palate, Flora & Fauna Weiß - Weingut Eymann shows a refreshing, crisp texture. The cuvée opens directly with juicy citrus fruit, lime and lemon setting the first accent. Then exotic notes of pineapple and mango unfold, accompanied by ripe pear and a little white peach. The fine residual sweetness is perfectly balanced and carries the fruit without diminishing the freshness. The wine remains clearly dry in impression, very precise and straightforward.
The acidity structure is lively and taut, but never sharp. It supports the medium body and provides a wonderfully easy-drinking flow. The aromatics always remain on the bright, fresh side, with plenty of citrus and floral finesse. The mineral notes from limestone and loess bring depth and clarity to the taste. The finish is medium in length with pineapple, lime zest, delicate herbal spice and a salty note that immediately makes you want another sip.
The Palatinate and especially Gönnheim offer ideal conditions for this cuvée. The mild, sunny climate ensures ripe, aromatic grapes. At the same time, cool nights and the limestone- and loess-rich soils preserve clear acidity and fine minerality. This combination is reflected directly in the glass. Biodynamic cultivation reinforces the focus on terroir and precise fruit. The result is a white wine that very clearly expresses the origin and style of the “Old World”, while appearing modern, juicy and full of zest for life.
The three grape varieties complement each other perfectly. Yellow Muscat brings fragrance, lightness and playful fruit. Gewürztraminer provides spice, exotic aromas and fullness on the palate. Riesling delivers freshness, drive and a firm core. This creates a balanced, very easy-drinking white wine with a clear profile. This harmony is also reflected in the key aromas, which can be easily summarized as follows:
- Exotic fruit such as pineapple and mango
- Citrus power with lime, lemon and grapefruit
- Floral notes of rose blossom and orange blossom
- Fine herbs and white spices
- Cool minerality from limestone and loess
The style comes across as fresh, animating and yet surprisingly multi-layered. The crisp texture is perfect for its role as a relaxed balcony and terrace wine, while the spice and minerality also delight more demanding connoisseurs. This white wine effortlessly accompanies the entire evening, from aperitif to light main course. For a quick overview, here is a short characterization:
- Fruit-driven, fragrant and inviting
- Crisp, fresh and clearly structured
- Underpinned by minerality with Palatinate terroir
- Balanced interplay of Muscat, Traminer and Riesling
- Perfect as a versatile all-rounder for many occasions
Production of Flora & Fauna Weiß from Weingut Eymann
Flora & Fauna Weiß - Weingut Eymann comes from Gönnheim in the Palatinate. The vineyards lie in the gently rolling hills along the German Wine Route. A mild, almost Mediterranean climate prevails here. Many hours of sunshine, little rainfall and the protective edge of the Haardt mountains create ideal conditions for aromatic white wines. The vines take root in soils of limestone and loess, which lend the wine its cool, salty minerality and its clear, taut character.
Biodynamic viticulture is the focus at Weingut Eymann. Work in the vineyard is carried out with great respect for nature and natural cycles. The grapes for this cuvée ripen in mixed parcels where Yellow Muscat, Gewürztraminer and Riesling interact very harmoniously. Reduced yields ensure concentration and an intense aromatic spectrum.
The harvest is done by hand. This way, only ripe, aromatic and sound grapes reach the cellar. The team selects directly in the vineyard and again later on the sorting table. The harvest time is determined by aromatic ripeness and crisp acidity. This is how the fresh, light-footed yet expressive character of the wine is created.
Gentle handling is paramount in the cellar. The grapes are brought quickly to the press. A gentle pressing process releases the fine must components from the berry skins without extracting harsh tannins. Depending on the batch, a short period of skin contact follows in order to extract aromatic compounds from the skins. The clear must then flows into stainless steel tanks.
Fermentation takes place cool and temperature-controlled in stainless steel. This preserves the fine fruit of the three varieties. Yellow Muscat shows its fragrant, floral side, Gewürztraminer its exotic spice and Riesling its citrus freshness. After fermentation, the wine remains on the fine lees for some time. This lees aging gives it a delicate creaminess and more depth without masking the crisp structure.
Maturation in stainless steel emphasizes freshness and the clear varietal character. No wood overwhelms the fruit; everything appears pure, precise and very clean. Before bottling, a gentle filtration takes place. The screw cap preserves the aromatics and ensures a fresh impression with every bottle. The result is a white wine that perfectly captures the idea behind the “Flora & Fauna” line: vibrant nature, clear fruit and fine terroir in the glass.
Enjoyment recommendations for Flora & Fauna Weiß from Weingut Eymann
This Palatinate white wine pairs wonderfully with many dishes and occasions. The crisp freshness, exotic fruit and fine spice harmonize ideally with light-colored, delicate dishes. It is particularly successful in combination with fresh salads, goat cheese, grilled vegetables and summery appetizers. Lime, mango and pineapple on the nose pair especially well with dishes that have a touch of exotic flair.
With light fish, such as pan-fried pike-perch or grilled gilt-head bream, the wine provides a lively, citrusy freshness. It also creates a very appealing interplay with seafood such as prawns, scallops or squid. Asian-inspired cuisine with ginger, coriander, lemongrass and a hint of chili is an excellent match. The fruit of the wine cushions spice and heat with elegance.
For light meat dishes, this white wine also leads to exciting combinations. Poultry, such as lemon chicken from the oven, light turkey dishes or veal medallions with herbs, gain a fresh accent from the wine’s aromatics. For vegetarian cuisine, it is very well suited to risotto with green asparagus, leek and goat cheese quiche or pasta with lemon cream sauce and herbs.
As a balcony or terrace wine, Flora & Fauna Weiß shines on many occasions. It suits a relaxed evening after work just as well as a spontaneous garden get-together with friends. As an aperitif before a meal, it provides the ideal start, thanks to its fragrant nose and vibrant freshness. In a mixed wine lineup, such as at a party or buffet, it proves to be an extremely versatile all-rounder.
The ideal serving temperature is between 8 and 10 degrees. This allows the fragrant aromas to unfold while the acidity remains nicely taut. A decanter is rarely necessary for this wine, but a few minutes in the glass are enough for it to open up beautifully. A classic, tulip-shaped white wine glass offers the aromatics enough space and directs the freshness precisely to the palate.
Flora & Fauna Weiß also offers plenty of drinking pleasure after one or two years of storage. The fruit remains present, while the minerality becomes somewhat more pronounced over time. The focus, however, is on enjoyment in its youthful, juicy phase. Each sip feels like a small walk through a summery Palatinate vineyard full of fragrance, freshness and lightness.
