The Masseria Maime Salento IGT from Tormaresca is one of the top wines of the winery. The Negroamaro Masseria Maime appears in the glass in intense ruby red, on the nose floral scent dead of roses and violets, fresh dark fruits such as black cherries, mulberries, followed by spicy notes reminiscent of liquorice anise, cinnamon and cloves. On the palate, this wonderful red wine from Puglia is rich in fruit, elegant with balanced, soft and velvety tannins. The finish is long, dense and durable.
Vinification of the Masseria Maime Salento IGT of Tormaresca
For this pure Negroamaro, the grapes are harvested fully ripe manually at the end of September. The pressing is followed by maceration and alcoholic fermentation on the shells for a period of 15 days at a controlled temperature of 26 ° to 28° C. The shells are repeatedly gently pumped under with a special technique that allows very gentle and even extraction of colour, aromas and tannins. After removal from the skins, the wine is immediately transferred to French oak barriques, where malolactic fermentation and then ageing take place for 12 months. After bottling, the wine matures for another 18 months in the bottle before being sold.
