Vinification of Karl Pfaffmann Pink Vineyard
The basis for the first-class and wonderfully elegant Pink Vineyard cuvée from Karl Pfaffmann consists of Cabernet Sauvignon, Dornfelder, and Merlot grapes. When optimal physiological ripeness is ensured, the grapes for Pink Vineyard are harvested exclusively by hand, without the aid of coarse and less selective grape harvesters. After the harvest, the grapes are quickly transferred to the press house. Here, they are selected and gently crushed. Then, fermentation takes place in stainless steel tanks at controlled temperatures. The vinification is followed by several months of aging on the fine lees before the wine is finally racked.
