Vinification of Peter Zemmer Pinot Grigio South Tyrol
This balanced white wine from Italy is vinified from the Grauburgunder grape variety. In Alto Adige, the vines that produce the grapes for this wine grow on soils of sedimentary and weathering rock. After the hand-picking, the grapes reach the press house in the fastest way. Here you will be selected and carefully broken up. After a short mash life, fermentation takes place in a stainless steel tank at controlled temperatures. After the end of the fermentation, the Pinot Grigio from Zemmer can continue to harmonise on the fine yeast for a few months.
