The Sauvignon Blanc Collio DOC from Aziende Agricole Livon shines straw yellow to golden in the glass, always with slightly greenish reflections. The intense and characteristic bouquet is wonderfully balanced and smells of peppers, melons and tropical fruits, a fan of perfectly harmonizing aromas. On the palate, this Sauvignon Blanc from Collio is pleasantly dry, well-structured, lush and full-bodied. The finish is elegant and lingering.
Vinification of the Sauvignon Blanc Collio DOC from Livon
The Sauvignon grapes for this white wine grow on marly-loamy soil in the vineyards of the municipality of Dolegna del Collio. Harvested by hand, the grapes are crushed for eight hours at a cold temperature in the horizontal press, after which the must is clarified by natural decantation. Fermentation takes place in steel tanks at a controlled temperature of 18° C. After fermentation, the resulting wine remains in the same tanks at a constant temperature for around 5 months. Finally, the wine is bottled, where it matures for a certain amount of time before being sold.
The Sauvignon Blanc Collio from Livon can be stored for 4 to 5 years.
