Vinification of the Sauvignon Blanc Sekt Brut from A. Diehl
This sparkling wine clearly focuses on one grape variety, Sauvignon Blanc. For this wonderfully elegant varietal wine from A. Diehl, only immaculate grapes were harvested. Sauvignon Blanc Sekt Brut is an Old World wine in the best sense of the word, as this German wine exudes an extraordinary European charm that clearly underscores the success of Old World wines. The ripening of the grapes for this Sauvignon Blanc wine is influenced to a considerable extent by the climate of the growing region. In Pfalz, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and uniform grapes and a rather moderate must weight. When the perfect physiological ripeness is ensured, the grapes for the Sauvignon Blanc Sekt Brut are harvested exclusively by hand without the help of coarse and less selective full harvesters. After harvesting, the grapes are quickly transferred to the press house. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks and bottle fermentation at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally bottled.
