After hand-harvesting, the grapes are immediately taken to the press house. There they are selected and gently crushed. Fermentation in stainless steel tanks at controlled temperatures then follows. After fermentation, the wine is aged for several months on the fine lees before it is finally drawn off. After the wine has been finished, Schloss Sommerau Alcohol-Free Red Wine is gently dealcoholized.
