The basis for the powerful Sileno Cannonau di Sardegna from Sardinia is grapes of the Cannonau variety. In Sardinia, the vines that produce the grapes for this wine grow on limestone soils. After being harvested by hand, the grapes are taken immediately to the press house. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation is complete, the Sileno Cannonau di Sardegna can continue to harmonize for several months on the fine lees.
