Vinification of the St. Magdalener Classico from Petruskellerei
The balanced St. Magdalener Classico from Italy is a blend made from the grape varieties Lagrein and Vernatsch. The grapes grow under optimal conditions in Trentino-Alto Adige. The vines root deeply into clay soils here. When they reach optimal maturity, the grapes for the St. Magdalener Classico are harvested exclusively by hand without the aid of rough and less selective machinery. After harvest, the grapes are immediately taken to the winery. Here they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. The vinification is followed by several months of aging on the fine lees before the wine is finally bottled.
