The Torcicoda Primitivo Salento IGT from Tormaresca sparkles in the glass in an intense ruby red and unfolds a complex bouquet, with aromas of ripe, plums and black cherries, followed by spicy notes of vanilla and dark chocolate. On the palate, this Primitivo is dry, gentle, balanced, of beautiful complexity, with present, soft tannins, pleasantly tasteful. Harmonious, appealing and long lasting in the final.
Vinification of Tormaresca Torcicoda Primitivo Salento IGT
The grapes for this pure Primitivo are harvested at the optimum ripening time. After pressing, the must is placed in stainless steel tanks, macerated and undergoes alcoholic fermentation on the shells at a controlled temperature of 26°C for a period of 15 days. During this process, the must consumes almost its entire sugar content. After subtraction from the peels and transfer to French and Hungarian oak barrels, malolactic fermentation follows, followed by ageing for 10 months in the same barrels. After bottling, the wine matures for another 8 months in the bottle before being sold
